Well, they are not balls really, I don't know what to call its shape but that's the best way to translate from Turkish.
- 1 1/2 cup red lentils
- 1 cup bulgur wheat (fine) - it is sold as "koftelik bulgur- you can find in any middle-eastern grocery store
- 1 big yellow onion-finely diced
- 1 bunch green onion - finely chopped
- 1 small bunch of parsley - finely chopped
- 1 tbs tomato paste
- 1 tbs red pepper paste - again can be found in middle-eastern groceries
- 1/2 cup extra virgin olive oil
- Salt & pepper
- 1 tsp cumin
- Lettuce leaves
- 500 mL water
- Wash and drain red lentils and add 500 mL water to cook. Be careful it usually cooks very quick. There has to be little water, still, don't wait until there's no water.
- Turn off the heat and add bulgur, mix well and close the lid. Bulgur will retain the remaining water, about 20-30 minutes.
- While bulgur and red lentil mix are having fun together, heat olive oil in a pan and diced YELLOW onions. Cook until they are soft and then add red pepper and tomato paste, salt and pepper. Then add 1/2 cup water and cook for about 5 minutes and later turn off the heat.
- Wait until everything is cool because you are going to work with your hands and I don't want you to burn your hands, so BE careful.
- In a big bowl mix lentil and onions and cumin. You may either work with your hands as you're making a dough or you can use a wooden spoon. Hands are easier. It has to be mixed really well.
- Now add parsley and green onions and again mix really well.
- Take pieces as big as walnuts and give them meatball shape or nuggets.
- Place lettuce leaves on a serving plate and place the nuggets/balls on them.
- Enjoy!
